What do you define as a non meat eater?

My friend 240 lbs and considers herself as a non meat eater. She makes a really big deal out of it where ever she goes. It's a bit embarrassing after she states "I don't eat meat" and then shoves chicken, turkey, fish, shrimp, nuggets, dairy products and just about anything in her mouth except for beef. My question is What is defined as a non meat eater? Why not just state I don't eat beef?
